Whole bunch pressing with a very soft and slow pressing cycle, champenoise style. Settling of the must after 48 hours in the cold. Fermentation and aging in used 225L French oak barrels, 600L Austrian oak barrels and in a 720L concrete egg-shaped tank. Aged on the lees for 8 months and 6 months in the bottle before going on the market.

Straw yellow layer with bright greenish reflections give this wine a beautiful sight. A nose of good intensity developing aromas of white flowers, citrus and a very subtle touch of wood. Beautiful mouth with a fresh attack given its beautiful natural acidity with a round finish from its time in French oak barrels and the egg-shaped concrete deposit. It has a magnificent balance in the mouth.
