Lux Brut is not a cava, but a sparkling wine from the Spanish Penedès region. Belgian chef Jess Van Weert describes it as “my own flavor, as opposed to some cava standards,” as he has added, for example, some aromas of Gewürztraminer, a grape that is not allowed in an official cava. "In addition, the production process for Lux differs from traditional cava, resulting in a product that is unique to this region. Lux Brut is made using the Charmat method. This is a quick and efficient way to produce sparkling wine, ensuring that the natural primary quality of the grape is maintained.
