Made with 100% Baboso Negro grapes

Red aged in French oak barrels

Elaboration:  Grape selection in the vineyard and on the selection table at the harvest reception. Grape destemmed 100% and lightly trodden in open stainless steel tank.  4 days of cold pre-maceration to start fermentation slowly at low temperatures. Very little intervention during fermentation, favoring smooth and short pumpovers with occasional punch downs. Malolactic fermentation and aging in 225L French oak barrels. 100% new barrels. Aging in barrels for 12 months and a minimum of 12 months in the bottle before going on the market.
